What the law requires

Documented food safety management

Food business operators must put in place procedures based on HACCP principles and keep them up to date. For most small caterers a structured pack of records satisfies this.

Allergens

The fourteen regulated allergens must be identified and information given for both prepacked and non prepacked food, with prepacked for direct sale requiring full ingredient labelling.

Tips must be passed on

The Employment (Allocation of Tips) Act 2023 requires qualifying tips to be paid to workers in full by the end of the following month, with a written policy and records kept for three years.

Cleaning services packCleaning products are covered by COSHH, so employers must assess exposure and keep safety data sheets available to staff. Cleaners frequently work alone and out of hours, which is the risk most commonly missing from a small contractor's paperwork. Childcare and nurseries packThe EYFS statutory framework sets minimum staff to child ratios of one to three for under twos, one to four for two year olds and one to thirteen for three year olds and over with a qualified teacher.
