What the law requires

Documented food safety management

Food business operators must put in place procedures based on HACCP principles and keep them up to date. For most small caterers a structured pack of records satisfies this.

Allergens

The fourteen regulated allergens must be identified and information given for both prepacked and non prepacked food, with prepacked for direct sale requiring full ingredient labelling.

Tips must be passed on

The Employment (Allocation of Tips) Act 2023 requires qualifying tips to be paid to workers in full by the end of the following month, with a written policy and records kept for three years.

How updates work

Every document carries a version number and a reviewed date. On the first Tuesday of each month the pack is checked against its primary sources. If anything has changed you receive the updated file and one line explaining what moved and why. If nothing has changed you receive an email saying so.

April and the Budget are the months when most figures move.

Will this improve my hygiene rating?

The rating includes confidence in management, which is what documented procedures evidence. Structural and hygiene scores depend on the premises.

Is this a full HACCP plan?

It is a structured food safety management pack built on HACCP principles, suitable for most caterers. Complex manufacturing needs a bespoke plan.

Does the tips policy cover card and cash?

Yes, both, along with the allocation record the Act requires.

Do you cover Scotland and Northern Ireland?

Food standards guidance differs; the pack notes where Food Standards Scotland applies.

How is it delivered?
